Theta Eating & Mung Bean Green Machine

So I love to eat in ABUNDANCE each day and every day.

I love food.

It fascinates me, it sustains me, it nourishes me, it delights me, it sings to me (from my belly!), it entices me, and it gives me energy.

For these and other more obvious reasons, I consider food a Massive part of my life. I make sure to eat only what works well for my body, mind and entire system.

I have spent many many years experimenting with what works Best for me, how I thrive on certain foods and am debilitated by others. (Trial and error but of course no food ends up in court where I daresay some belong.) And I take what I like and leave the rest.

By the rest I mean all of the following:


So yes now you are thinking what you don’t eat any of them…. No I don’t.  and I feel so much better for it. I do not need to eat these foods; they do not need to enter my body at this time, in this life, in this phoenix where I reside.

In fact most of what I eat is raw, uncooked, unprocessed, living in its natural state food.

But now the autumn is here I will tend to dive into sweet potato, squash, the good ol irish rooster, mung beans, rice, dal, lentils, and other yummy things that tantalise my taste buds AND make me happy.


I believe that food can make you happy, I mean dancing and jiving, singing and screaming, laughing and playing, happy. Why? Because it rushes around my body giving all my cells the energy and prana they are asking for. My body is grateful, pleased and rewards me for it.

You might not care if you can stretch into hanumanasana pose (aka splits) or enjoy downward dog like a real puppy but believe me it will feel (everything will) oh! so different when you give your body what it needs. And that comes in the form,( almost all of the time) in unprocessed vitality-filled whole plant based foods.

So for now I will leave you with what hubby and me are having for dinner ce soir. (great for next day lunches)20140918_172908

You will need:

2 cups Mung beans (soaked for 8 hours)6 cups water20140912_111702
Oil (coconut or grapeseed)
Good handfuls of Kale or spinach
1 medium sized Onion
3 cloves Garlic
1 tsp Cumin, turmeric, cayenne pepper, as u like it
1 can full fat Coconut milk or the blocks of coco


All you need to do is chop then sauté the garlic and onion in oil of your choosing (I used coconut oil and grapeseed), add the spinach and/or kale, add the spices, rinse the mung beans, add these with the water. Bring to the boil, cover then simmer for appox 50 minutes. Add the coconut milk and its ready.

Cook the rice according to the packet and pour your mung bean yumminess over the rice.
If you have any other veggies on hand you need to use eg broccoli, carrots, sweet potatoes, throw them in with the greens.
If you really just cant do without the dairy add in greek yoghurt instead of coco milk or whatever you have on hand.
I also sprinkled nutritional yeast on top of mine at the end. YUM.  You can use salt/pepper/nut yeast.

  2.  Because there is so much other stuff happening at the Phoenix that you will need to know about!

BUT Food is such a huge part of everyone’s life, it IS essential that we eat right to protect our hearts, brain, cells, organs, and for us to function at OUR ABSOLUTE BEST, therefore I feel it’s essential to reveal my secrets in this arena of OUR fun filled journey we call life!
